Healthy and delicious, vegan meal recipes from things you already have at home

If you are confused, don’t know what to make and don’t have enough ingredients at home to make something too creative, well then, these are your dream recipes! 

1. Roasted Vegetables 

What I do is add the vegetables that take longer to cook first (I like potatoes/ carrots/ sweet potatoes/ onions), put some olive oil on top, and put that inside the oven on 9 (or the hottest degree available on yours)

Then after an hour I’ll add the vegetables that don’t need as long (such as broccoli/ mushrooms and cauliflower), put more olive oil on top.

And I leave the oven on for 30 minutes.

When done, I brush some thyme and olive oil on that.

2. Veggies with tomato soup and rice

The veggies: 

Start by chopping some mushrooms and frying them olive oil.

Then add boiled water on to them. 

Follow up with potatoes and carrots.

Zucchini could also be a nice touch.

Wait until the water starts to lower and add some tomato sauce on to that.

The rice:

Boil a cup and a half of water and add 2 tbsp of olive oil and a tbsp of salt to it.

When the water is bubbly, add a cup of basmati rice.

3. Couscous and salad to the side

Couscous:

Fry some mushrooms with some olive oil

When almost done, add a chopped onion and fry it for about 30 seconds

Add a tbsp of salt and mix that all together 

Add 2 cups of boiled water

Add a cup of couscous 

Add quarter a cup of lentils (optional)

Add two tbsp of chickpeas (out of a tin)

Keep moving until all the water gets absorbed.

Salad:

Chop some spinach, rocket, lettuce and mushrooms, onions, avocado

Squeeze two limons

Boil 2 tbsp of lentils

Add almonds 

Add 2 tbsp of olive oil 

Add 2 tbsp of salt

Mix all together.
